Bubble and Squeak Recipe
Ingredients:
3 large potatoes, boiled
4 cups cabbage, chopped, parboiled and drained
1 small onion, chopped
4 slices bacon, cut up and fried
25g (1oz) butter

Preparation:

1.

Chop cooked potatoes.
2. Melt the butter, then add onion and sauté until golden brown. Add chopped, cooked cabbage and chopped, cooked potatoes.

3. Heat a frying pan until hot and add the bacon and fry until crisp. Add the bacon to the potato mix.

4. Allow potatoes to become golden brown on bottom over medium heat, about 20 minutes or less. Invert skillet over large serving plate. Garnish with parsley, if desired.
