Easy Vegetable Curry
Ingredients Cauliflower - 1/4 kg. (cut to big flowerlets) Capsicum - 3 medium sized (cut into 1/8ths) Potato - 2 medium-sized(cut into small cubes) Onion - 1 medium sized(chopped finely) Tur dal - 1 tbsp Grated coconut - 2 tbsps Ginger - 1/2 inch piece Green chillies - 4 Oil - 1 tbsp Coriander leaves - finely chopped Method 1. Fry the onions in oil till it changes colour. 2. Boil all the chopped vegetables and the fried onions in 2 glasses of water. 3. When the vegetables are almost done, add salt. 4. Grind tur dal, coconut, ginger and green chillies with a little water and add to the boiled vegetables. 5. Cook in low flame for 7 minutes, stirring from time to time. 6. Garnish with chopped coriander leaves. Serve hot with chapatis, puris or rice |
